Leftover Herbs?

Healthy Spring cooking is on... if your kitchen is like mine, you have bunches and bunches of herbs that you won't entirely use.

Clean and dry your herb mix, portion in an ice cube tray, pour 1 Tablespoon of extra virgin olive oil over the leaves and freeze overnight. In the morning the leaves will be floating on top. Add more oil to cover the leaves completely and re-freeze. Add when needed to soups, sauteed veggies or roasted potatoes.
