Cancer Fighting Kitchen

My kitchen has turned into a cancer fighting center.  I have always eaten healthy but now it is a laser focus on everything that I put into my body.  As I am learning more and more about cancer, there are many foods that help prevent cancer and those that have cancer, it keeps the cancer from spreading.

I will share with you my favorite new recipes, so you too, can have a cancer preventative kitchen.



Cucumber, Jicama and Mango Salad

1/4 Cup brown rice vinegar (sugar-free)
1/4 cup water
2 tbl agave nectar
1/2 tsp of freshly squeezed lime juice
1 large cucumber, diced
1 cup peeled and diced jicama
1 cup diced mango.  Approximately all dicing should be 1/4 inch cubes.
3 tbl chopped fresh mint

Combine vinegar, water, agave nectar and lime juice in a small saucepan over medium heat and bring to a boil.  Refrigerate the dressing for 15 minutes.  Combine dressing, cucumber, jicama and mango. Add mint.

Enjoy!

I enjoy it with and without the dressing.

You can store in the refrigerator for up to 6 days.
