2 Albacore Tuna cans or 1 whole pulled roasted chicken breast.
2 green onions, chopped
Half container of garbanzo or white beans
Whisk together the following and add to:
Juice of 1 lemon
Half bunch of dill, finely chopped
2 Tbl of EVOO
1 small clove finely chopped garlic
1 tbl of mayo or mustard (optional)
Salt and pepper to taste + the smallest dash of cumin or paprika.
When serving, top with sliced avocado and serve over a handful of micro greens or arugula.
When I have leftovers, I will add any of the following to change it up! cherry tomatoes, red onion, edamame, diced cucumbers.

Goddess Smoothie
Yum! Goddess Smoothie
- 1 avocado, pitted and peeled
- 1 cup (or more) filtered water
- 1 cup (or so) ice
- 1 cup (or so) spinach
- 1 pear, cored
- 1 apple, cored
- splash vanilla extract
- splash fresh lemon or lime juice
- 4 to 6 turns of the black pepper mill
- dash himalayan crystal salt or sea salt
Give it a whirl in your blender. Drink and Enjoy!

Yum! Mushrooms & Cauliflower
Garlic Mushrooms over Cauliflower Rice
Ingredients:
· 24 oz
Mushrooms (whatever kind you like)
· 1/2
Tablespoon Olive Oil or vegetable broth
· 2
Cloves Garlic, chopped
· Trader Joe's 21 Seasoning or Italian Seasoning, pepper to taste
· Dash
(or two) of a balsamic glaze
· One
head of cauliflower
Heat olive oil in a frying pan then add garlic and cook at a medium heat for a couple of minutes stirring constantly. Add the mushrooms, continue cooking & stirring for another minute or so. Season with a dash or two of balsamic vinegar and Italian seasoning to taste.
Reduce heat to as low as you can go then cover
the mushrooms. Leave the garlic mushrooms to sweat for at least ten minutes,
stirring occasionally. Take the lid off and let them cook for at least another 10 minutes, to caramelize.
While mushrooms are cooking, grate cauliflower by
hand or with a food processor. Place grated cauliflower in a steamer with
water and steam until softened. Transfer “rice” into a serving dish and
scoop mushrooms over cauliflower rice.
Options: you can add onions or shallots to the mushrooms. If you are feeling a bit lazy, you can steam whole cauliflower and mash with a potato masher.
Serve and Enjoy! For those of you who are vegan, enjoy simply alone and for those of you that are carnivores, this is a great side dish.

Blueberry Muffin Recipe
This recipe was passed along to me by Aunt Sue. She got the recipe from the "Forks over Knives - the how to companion to the feature documentary Forks over Knives- cookbook".
1 medium banana - mashed

one 15 oz can sweet potato puree (I substituted with organic pumpkin)
1/4 cup maple syrup (I used agave nectar as I can't have maple syrup)
1 tsp vanilla
2 cups whole oat flour
1/2 tsp soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground nutmeg
1/4 tsp ginger
1 cup fresh blueberries
Bake at 350 degrees for about 20 minutes and Enjoy! You can make muffins or make a bread loaf.
These are perfect snacks for me while I am not feeling well so I prepped them beforehand. They are incredibly, incredibly healthy. Good for anyone wanting a sweet treat but no sugar and all good nutrients, for diabetics or cancer patients.

Coconut, Chocolate and Banana Dollups
These are fantastic! No sugar and super healthy
Chocolate Chip, Banana, Peanut Butter and Coconut Dollups:
3 cups of dried coconut flakes (unsweetened)
Chocolate Chip, Banana, Peanut Butter and Coconut Dollups:
Ingredients:
3 large bananas
1 tsp of vanilla extract
1/4 cup of organic peanut butter (see the brand I use- below)3 cups of dried coconut flakes (unsweetened)
1 tsp cinnamon
sea salt to taste
1 cup of dates (remove the pits)
1 organic vegan 72% or higher dark chocolate (broken into chunks)
Directions: Mix the bananas and dates in a high powered mixer (I use my Breville) until smooth and the lumps are removed. In a big bowl add all other ingredients and stir until evenly combined. Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper. Drop dollops of the dough, each about 1 teaspoon in size on the baking sheets. Press down a bit to flatten them. Bake for 20 minutes or until the dollups are golden brown on the bottom.
