Yum! Waldorf Salad

Eating lots of Waldorf salad lately..  Here's my spin on the traditional recipe


In a large mixing bowl, add:
5 apples, cubed.  Any will do, I mix granny and red delicious. 
1/4 cup/handful chopped walnuts
1/2 tsp cinnamon
juice of a half orange or lemon
1.5 tbl vegannaise (or mayonnaise- any variation will do)
1/4 cup/handful unsweetened coconut 
1/4 cup/handful of red grapes, sliced or a handful of raisins

Options: You can add salt and pepper, 1 pear cubed, 3 cuties, serve on a bed of lettuce.

Mix all together, refrigerate.  Enjoy!  Stays fresh for 2 days, about 4 servings.
