In the mood for some quinoa? I have been eating it all the time....
Make a half cup of quinoa. Once cooked fluff with a fork. Cool.
Once quinoa is cooled add: half cup blueberries, cubed mango, and cubed cucumber. Half teaspoon sliced almonds or pepitas.
Add Dressing: 1.5 tablespoons EVOO, 2 tablespoons lemon juice, 1.25 teaspoon lemon zest, 10 basil leaves chopped finely, Himalayan salt and pepper. Whisk and then mix in with quinoa. Serves two. Enjoy!
