Cocoa Truffles

Enjoy guilt-free, fruit filled cocoa truffles.  

3/4 cup almonds
1/2 cup dried plums or dates (dried fruit only- no sugar or preservatives added)
1/2 cup dried figs (I use white)
1 tsp vanilla
pinch of sea salt 
3 tsp raw cocoa powder

Blend the almonds till they become like a fine meal- but not too much where they are like butter.  Remove from your food processor or high-speed blender.  Blend dried fruits, until no chunks are left.  Add all ingredients and blend until it forms a dough.  Scoop and roll into balls.  Refrigerate, eat to enjoy! 

Other options: add unsweetened coconut, use cashews instead of almonds or roll in ground almonds or shredded unsweetened coconut.  

Health Hint: Raw, Organic Cocao Powder has more antioxidants than blueberries, red wine and black and green tea.  Four times the quantity of antioxidants than found in green tea.
